  • 1 small yellow onion, chopped
  • 2 garlic cloves, minced
  • 2 ½ cups low-sodium chicken broth
  • 2 (4 oz) cans diced green chilies
  • 2 (15 oz) cans great northern beans, drained and rinsed
  • 2 heaping cups cooked chicken, shredded
  • 1 cup sour cream or plain Greek yogurt
  • 1 cup corn (frozen or fresh)
  • Fresh cilantro, shredded cheese, avocado for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté onion for 3-5 minutes until softened; add garlic and cook for an additional 30 seconds.
  2. Stir in chicken broth, diced green chilies, cumin, cayenne pepper, oregano, paprika, lime juice, salt, and pepper.
  3. Drain and rinse beans; optionally blend some beans with a splash of broth for creaminess.
  4. Add both pureed and whole beans with corn to the pot. Bring to a simmer and cook uncovered for 15–30 minutes.
  5. Remove from heat; stir in sour cream (or Greek yogurt) and shredded chicken until combined.
  6. Serve garnished with cilantro, cheese, avocado, and tortilla chips.
