  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 2 tablespoons taco seasoning
  • 1 can petite diced tomatoes, drained
  • 1 can refried beans
  • 1 bag frozen tater tots
  • 8 ounces sharp cheddar cheese, shredded

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, brown the ground beef and onion; drain excess fat. Stir in taco seasoning and drained tomatoes; simmer for 5 minutes.
  3. Layer refried beans on the bottom of the baking dish, followed by tater tots and then the beef mixture. Top with shredded cheese.
  4. Cover with foil and bake for 20 minutes; remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
