- 2 servings dry instant ramen noodle cakes (approx. 140 g)
- 10 oz extra firm tofu or choice of veggies/mushrooms
- 5–7 tbsp soy sauce
- 1.5 tsp dark soy sauce (optional)
- 2–3 tbsp corn starch
- 1–3 tbsp sugar or sweetener
- 2 tbsp rice vinegar or lemon juice
- 1/2 tbsp chili garlic sauce
- 1 tbsp sesame oil
- Chopped scallions and sesame seeds for garnish
Instructions
- Prepare the sauce by mixing all sauce ingredients until well incorporated.
- Boil water in a pot and cook the ramen noodles for about 2-3 minutes less than package instructions.
- Drain the noodles and set aside.
- In a frying pan over medium-high heat, sauté your choice of veggies or tofu until cooked.
- Add the prepared sauce to the pan and simmer for 2-3 minutes until slightly thickened.
