  • 2 servings dry instant ramen noodle cakes (approx. 140 g)
  • 10 oz extra firm tofu or choice of veggies/mushrooms
  • 57 tbsp soy sauce
  • 1.5 tsp dark soy sauce (optional)
  • 23 tbsp corn starch
  • 13 tbsp sugar or sweetener
  • 2 tbsp rice vinegar or lemon juice
  • 1/2 tbsp chili garlic sauce
  • 1 tbsp sesame oil
  • Chopped scallions and sesame seeds for garnish

Instructions

  1. Prepare the sauce by mixing all sauce ingredients until well incorporated.
  2. Boil water in a pot and cook the ramen noodles for about 2-3 minutes less than package instructions.
  3. Drain the noodles and set aside.
  4. In a frying pan over medium-high heat, sauté your choice of veggies or tofu until cooked.
  5. Add the prepared sauce to the pan and simmer for 2-3 minutes until slightly thickened.
  6. Mix in the drained noodles until well coated with the sauce.
  7. Serve hot, garnished with scallions and sesame seeds.
