- ½ pound ground beef
- 4 tablespoons butter
- ¾ cup diced carrots
- ¾ cup diced celery
- ¾ cup diced onion
- 4 cups diced potatoes
- 3 cups chicken broth
- ¼ cup all-purpose flour
- 1 to 2 cups Velveeta cheese, cubed
- 1½ cups whole milk
Instructions
- In a large pot over medium heat, brown the ground beef for 6-8 minutes until no longer pink. Drain excess fat and set aside.
- In the same pot, melt 1 tablespoon of butter and sauté carrots, celery, onions, basil, and parsley for about 10 minutes until tender.
- Add the diced potatoes, cooked beef, and chicken broth; bring to a boil. Reduce heat, cover, and simmer for 10-12 minutes until potatoes are soft.
- In a separate pan, melt the remaining butter over medium-low heat. Stir in flour and cook until bubbling (3-5 minutes). Mix this roux into the soup and bring to a boil for another 2 minutes.
- Lower the heat; stir in Velveeta cheese cubes, milk, salt, and pepper until melted. Remove from heat and fold in sour cream before serving.
