  • 5 pieces of bacon
  • 1 lb ground beef
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese (shredded)
  • 1/4 cup onion (diced)
  • 2 sticks celery (diced)
  • 1/4 cup butter
  • 6 tablespoons flour
  • 1 lb Yukon potatoes (peeled & diced small)

Instructions

  1. Cook bacon in a soup pot over medium-high heat until crispy. Transfer to a plate, leaving fat in the pot.
  2. Brown ground beef in the same pot; drain excess fat.
  3. Melt butter, then sauté onion and celery for 4-5 minutes until soft.
  4. Stir in minced garlic and flour; cook for 2 minutes.
  5. Gradually whisk in chicken broth until smooth.
  6. Add heavy cream, Worcestershire sauce, diced potatoes, and return cooked beef to the pot; bring to a boil then reduce heat.
  7. Simmer for about 15 minutes or until potatoes are tender.
  8. Turn off heat; mix in cheddar cheese until melted.
  9. Stir in reserved bacon bits and season with salt and pepper.
