  • 2 1/4 cups graham cracker crumbs
  • 3 tbsp sugar
  • 1 tsp ground cinnamon
  • 1/2 cup salted butter, melted
  • 24 ounces cream cheese, room temperature
  • 1 cup sugar
  • 3 tbsp all purpose flour
  • 3/4 cup sour cream, room temperature
  • 1 1/2 tbsp vanilla extract
  • 1 tsp ground cinnamon
  • 3 large eggs, room temperature
  • 2 large apples, chopped
  • 1/4 cup light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/8 tsp ground nutmeg
  • sprinkle of lemon juice
  • 1/2 cup caramel sauce
  • 1/2 cup heavy whipping cream, cold
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9×13 inch baking dish.
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of the prepared dish.
  3. In another bowl, beat cream cheese until smooth. Gradually add sugar and flour. Mix in sour cream, vanilla extract, cinnamon, and eggs until smooth.
  4. Toss chopped apples with brown sugar and spices in a separate bowl.
  5. Pour cheesecake filling over the crust, followed by the apple mixture.
  6. Bake for about 50 minutes until set but slightly jiggly in the center. Cool at room temperature before refrigerating for at least four hours.
