  • 2 pounds boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning

  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 12 ounces penne pasta
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the crock pot and sprinkle with Cajun seasoning.
  2. Add chicken broth, garlic, onion, red bell pepper, and green bell pepper. Stir gently.
  3. Cover and cook on low for 6 hours or high for 3-4 hours until chicken is tender.
  4. Remove chicken and shred it using two forks.
  5. Return shredded chicken to the pot; add heavy cream, Parmesan cheese, and uncooked penne pasta.
  6. Cook on high for an additional 30 minutes until pasta is tender.
