- 4 pounds yellow potatoes
- 2 tablespoons kosher salt
- 1/2 teaspoon baking soda
- 1/4 cup duck fat (or olive oil)
- 1 whole head of garlic
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon extra-virgin olive oil
Instructions
- Preheat the oven to 450°F and place a roasting pan inside.
- Rinse and cut the potatoes into large chunks. In a stock pot, cover them with water, add kosher salt and baking soda, then bring to a boil. Cook until fork-tender (about 25 minutes). Drain and let dry.
- Remove the hot roasting pan from the oven, melt duck fat in it, then roughen the potato edges by shaking them in a colander.
- Toss the dried potatoes with salt and pepper in the roasting pan, add the garlic cut-side down, and roast for about 55-60 minutes, tossing every 20 minutes until golden brown.
- After removing from the oven, mix roasted garlic cloves with rosemary and olive oil; toss this mixture with potatoes before returning to bake for an additional 5 minutes.
