- 1 lb ground beef (80/20)
- 2 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 cups heavy cream
- 1 cup beef broth
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 tbsp tomato paste
- Italian seasoning and red pepper flakes to taste
Instructions
- Cook rigatoni in salted boiling water until al dente; reserve pasta water before draining.
- Sauté onion in olive oil until soft, then add garlic and cook for another minute.
- Brown the ground beef in the skillet; drain excess grease.
- Stir in tomato paste, seasonings, and cook for a few minutes.
- Add beef broth and cream; simmer to thicken the sauce.
- Melt in Parmesan and mozzarella until smooth.
- Toss cooked rigatoni in the sauce, adding reserved pasta water as needed.
