Ingredients

  • 1 lb rigatoni pasta
  • 1 lb ground beef (80/20)
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 cups heavy cream
  • 1 cup beef broth
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp tomato paste
  • Italian seasoning and red pepper flakes to taste

Instructions

  1. Cook rigatoni in salted boiling water until al dente; reserve pasta water before draining.
  2. Sauté onion in olive oil until soft, then add garlic and cook for another minute.
  3. Brown the ground beef in the skillet; drain excess grease.
  4. Stir in tomato paste, seasonings, and cook for a few minutes.
  5. Add beef broth and cream; simmer to thicken the sauce.
  6. Melt in Parmesan and mozzarella until smooth.
  7. Toss cooked rigatoni in the sauce, adding reserved pasta water as needed.
