  • 1 ½ cups brown sugar
  • 1 cup cold butter, sliced
  • 1 ½ cups oats
  • 2 (8 oz.) packages cream cheese, room temperature
  • ½ cup granulated sugar
  • 3 large eggs
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • ¼ cup fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with greased aluminum foil.
  2. In a food processor, pulse together flour and brown sugar. Add cold butter until crumbly, then mix in oats.
  3. Reserve 1 ½ cups of the crumb mixture for topping and press the rest into the bottom of the pan. Bake for about 10 minutes until slightly golden.
  4. In a mixing bowl, beat cream cheese and granulated sugar until smooth. Mix in eggs one at a time, followed by milk, vanilla extract, lemon juice, and lemon zest until creamy.
  5. Pour cheesecake filling over the crust and sprinkle reserved crumb mixture on top. Gently press down.
  6. Bake for an additional 15-20 minutes until lightly browned on top.
  7. Allow to cool completely before cutting into squares.
