- 350 g (12 oz) diced chicken breast
- 4 minced garlic cloves
- 75 ml (⅓ cup) dry white wine
- 400 ml (1½ cups) chicken stock
- 180 g (6.3 oz) cream cheese
- 500 g (1 lb) gnocchi
- 100 g (3.5 oz) baby spinach
- Salt and freshly ground black pepper to taste
Instructions
- Heat olive oil and butter in a large skillet over medium heat until melted.
- Add the diced chicken and cook for about 4–5 minutes until golden brown.
- Stir in garlic and sauté for one minute.
- Pour in white wine and let it cook until most of the alcohol evaporates.
- Add chicken stock and Italian seasoning; bring to a gentle simmer.
- Stir in cream cheese until smooth.
- Mix in gnocchi and spinach; cover and cook for 3–5 minutes until gnocchi is tender.
