  • 4 boneless, skinless chicken breasts
  • 16 slices Swiss cheese
  • ½ lb ham, thinly sliced
  • 1 cup all-purpose flour
  • 4 eggs, beaten
  • 2 cups panko breadcrumbs
  • 3 tablespoons butter
  • 2 cups milk
  • ¼ cup Dijon mustard
  • 1 cup shredded Parmesan cheese

Instructions

  1. Season chicken breasts with salt, pepper, garlic powder, and onion powder; pound to about ½ inch thick.
  2. Layer Swiss cheese and ham on each breast; roll tightly and refrigerate for 30 minutes.
  3. Preheat oil in a deep pan to 325°F (170°C). Set up bowls for flour, eggs, and breadcrumbs.
  4. Dredge chicken rolls in flour, dip in egg, and coat with breadcrumbs.
  5. Fry each roll until golden brown (about 5 minutes per side) or bake at 325°F until cooked through (165°F internal temperature).
  6. For the sauce: Melt butter, add garlic and flour; whisk in milk gradually until thickened. Stir in Dijon mustard and Parmesan before serving.
