- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 3 stalks celery, diced
- 4 cloves garlic, minced
- 2 lbs ground beef
- 1 lb Yukon Gold potatoes, cut into 1-inch pieces
- 4 carrots, peeled and sliced
- 1 can green beans (14.5 oz), drained
- 3 tablespoons tomato paste
- 1 can diced tomatoes (14.5 oz) with juices
- 1 can black-eyed peas (15 oz), drained and rinsed
- 1 can corn (15 oz), drained
- 4–6 cups beef broth
Instructions
- Heat olive oil in a large Dutch oven over medium-high heat. Sauté onion and celery for about 2–3 minutes until soft, then add garlic and cook for another minute.
- Add ground beef to the pot, cooking until browned with no pink remaining.
- Stir in potatoes, carrots, green beans, tomato paste, diced tomatoes, black-eyed peas, corn, and seasoning. Pour in 4 cups of broth; adjust for desired consistency.
- Bring to a boil over high heat. Reduce to medium-low to simmer for about 14–16 minutes until potatoes are fork-tender.
- Serve hot with your choice of toppings.
