  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 stalks celery, diced
  • 4 cloves garlic, minced
  • 2 lbs ground beef
  • 1 lb Yukon Gold potatoes, cut into 1-inch pieces
  • 4 carrots, peeled and sliced
  • 1 can green beans (14.5 oz), drained
  • 3 tablespoons tomato paste
  • 1 can diced tomatoes (14.5 oz) with juices
  • 1 can black-eyed peas (15 oz), drained and rinsed
  • 1 can corn (15 oz), drained
  • 46 cups beef broth

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Sauté onion and celery for about 2–3 minutes until soft, then add garlic and cook for another minute.
  2. Add ground beef to the pot, cooking until browned with no pink remaining.
  3. Stir in potatoes, carrots, green beans, tomato paste, diced tomatoes, black-eyed peas, corn, and seasoning. Pour in 4 cups of broth; adjust for desired consistency.
  4. Bring to a boil over high heat. Reduce to medium-low to simmer for about 14–16 minutes until potatoes are fork-tender.
  5. Serve hot with your choice of toppings.
