  • 1 cup uncooked orzo
  • 1 large tomato, diced
  • 1 large bell pepper (any color), diced
  • 1/4 medium red onion, diced
  • 1 cup canned corn kernels, drained
  • 1 cup canned black beans, drained and rinsed
  • 1/2 cup chopped cilantro
  • 1/4 cup extra virgin olive oil
  • 2 tbsp lime juice
  • 1 tbsp honey or maple syrup
  • 1/2 tsp chipotle powder
  • 1/2 tsp cumin powder
  • Salt and pepper to taste

Instructions

  1. Cook the orzo according to package instructions until al dente. Drain and rinse under cold water.
  2. In a jar, combine olive oil, lime juice, honey (or maple syrup), chipotle powder, cumin powder, salt, and pepper. Shake well.
  3. In a large bowl, mix together the cooked orzo, black beans, corn kernels, bell peppers, diced tomatoes, red onion, and cilantro.
  4. Pour the dressing over the salad mixture and toss until everything is evenly coated. Serve chilled or at room temperature.
