  • 4 large ears of fresh corn
  • 1 ½ cups diced bell pepper (red and green)
  • 1 pint cherry tomatoes (halved)
  • 1 cup diced English cucumber
  • ½ cup finely diced red onions
  • ⅓ cup fresh cilantro (roughly chopped)
  • ¾ cup Cotija cheese
  • 3 tablespoons avocado oil
  • ¼ cup lime juice
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon dried parsley
  • ½ teaspoon black pepper
  • ¼ teaspoon cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon chili powder

Instructions

  1. Remove kernels from the corn; boil for about 5 minutes if desired. Allow to cool.
  2. Dice the bell peppers, cucumber, and red onions; halve the cherry tomatoes and chop the cilantro.
  3. In a small bowl, whisk together avocado oil, lime juice, red wine vinegar, honey, Dijon mustard, salt, parsley, black pepper, cumin, garlic powder, and chili powder.
  4. In a large mixing bowl, combine the corn and chopped vegetables; pour dressing over and toss gently until coated.
  5. Sprinkle Cotija cheese on top right before serving.
