- 4 large ears of fresh corn
- 1 ½ cups diced bell pepper (red and green)
- 1 pint cherry tomatoes (halved)
- 1 cup diced English cucumber
- ½ cup finely diced red onions
- ⅓ cup fresh cilantro (roughly chopped)
- ¾ cup Cotija cheese
- 3 tablespoons avocado oil
- ¼ cup lime juice
- 2 tablespoons red wine vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1 teaspoon salt
- 1 teaspoon dried parsley
- ½ teaspoon black pepper
- ¼ teaspoon cumin
- ¼ teaspoon garlic powder
- ¼ teaspoon chili powder
Instructions
- Remove kernels from the corn; boil for about 5 minutes if desired. Allow to cool.
- Dice the bell peppers, cucumber, and red onions; halve the cherry tomatoes and chop the cilantro.
- In a small bowl, whisk together avocado oil, lime juice, red wine vinegar, honey, Dijon mustard, salt, parsley, black pepper, cumin, garlic powder, and chili powder.
- In a large mixing bowl, combine the corn and chopped vegetables; pour dressing over and toss gently until coated.
- Sprinkle Cotija cheese on top right before serving.
