  • 4 tbsp butter (room temperature)
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup whole milk

  • 3 cups fresh or frozen blueberries
  • For the Streusel: 1/2 cup sugar
  • 1/3 cup cake flour
  • 1/2 tsp cinnamon
  • 4 tbsp cold butter (cubed)

Instructions

  1. Preheat your oven to 375°F and grease a 9×9 baking dish.
  2. In one bowl, whisk together cake flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until fluffy; mix in the egg and vanilla.
  4. Alternate adding the dry mixture and whole milk until just combined.
  5. Gently fold in the blueberries and spread the batter into the prepared pan.
  6. For the streusel topping, mix sugar, cake flour, and cinnamon; cut in cold butter until crumbly. Sprinkle on top of the batter.
  7. Bake for about 35-40 minutes or until a toothpick comes out clean.
