  • 4 tbsp melted vegan butter
  • 3/4 cup maple syrup
  • 1 cup almond or oat milk
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/2 cup regular or gluten-free all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 4 tbsp melted vegan butter (for swirl)
  • 1/3 cup light brown sugar
  • 2 tbsp cinnamon (for swirl)
  • 3/4 cup powdered sugar (for glaze)
  • 2 tbsp melted vegan butter (for glaze)
  • 2 oz softened vegan cream cheese

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine mashed bananas, melted vegan butter, maple syrup, almond or oat milk, and vanilla extract; whisk until smooth.
  3. In another bowl, mix baking powder, baking soda, cinnamon, salt, flour, and oats; stir well.
  4. Gradually fold dry ingredients into the wet mixture until just combined.
  5. Prepare the cinnamon swirl by mixing melted vegan butter, brown sugar, and cinnamon in a separate bowl.
  6. Layer half the batter in the loaf pan, drizzle with half of the cinnamon mixture, then add remaining batter and another drizzle of the swirl.
  7. Use a knife to create swirls throughout the batter.
  8. Bake for approximately 45 minutes or until a toothpick comes out clean.
  9. Let cool for 10 minutes before transferring to a wire rack; drizzle with cream cheese glaze if desired.
