  • 3 tablespoons fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 2 cups shredded cabbage
  • 8 small corn tortillas
  • ½ cup shredded carrots
  • 2 tablespoons mayonnaise
  • 2 tablespoons Greek yogurt
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • ½ teaspoon paprika
  • Salt and pepper, to taste
  • 1 tablespoon fresh cilantro, chopped (for slaw)
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon honey
  • Lime wedges, for garnish
  • Extra cilantro, for garnish
  • Optional toppings: sliced avocado, salsa, crumbled queso fresco

Instructions

  1. In a large bowl, whisk together cilantro, lime juice, olive oil, garlic, cumin, chili powder, salt, and pepper. Add shrimp and marinate for at least 15 minutes.
  2. For the slaw, combine cabbage, carrots, and cilantro in one bowl. In another bowl, mix lime juice, mayonnaise, yogurt, vinegar, honey, salt, and pepper; pour over the cabbage mixture and toss well.
  3. Heat a non-stick skillet on medium-high. Cook marinated shrimp for about 2-3 minutes per side until pink and opaque.
  4. Warm tortillas in a dry skillet or microwave. Assemble tacos by placing shrimp in tortillas and topping with creamy slaw.
