  • 1 teaspoon lime zest (from 1 lime)
  • 2 tablespoons lime juice (from the same lime)
  • 2 tablespoons honey
  • ½ bunch cilantro, finely chopped
  • 3 cups finely shredded green cabbage
  • ½ cup Greek yogurt
  • 2 tablespoons lime juice (from 1 whole lime)
  • Pinch of salt
  • 8 small (6-inch) corn or flour tortillas
  • 1 avocado, sliced
  • Extra lime wedges, for serving
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Prepare the shrimp by patting them dry and seasoning with salt, pepper, smoked paprika, garlic powder, and chili powder. Heat olive oil in a skillet over medium-high heat and cook the shrimp for about 90 seconds on each side until opaque.
  2. Reduce heat and add butter, lime zest, lime juice, and honey to coat the shrimp in the sauce; simmer for 2-3 minutes.
  3. In a mixing bowl, combine shredded cabbage, cilantro, Greek yogurt, lime juice, and salt. Toss until evenly coated.
