  • 1 cup graham cracker crumbs
  • 4 tbsp butter (melted)
  • 10 oz semi-sweet chocolate (chopped)
  • 16 oz cream cheese (softened)
  • 2 cups heavy cream (room temperature)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2/3 cup creamy peanut butter
  • Mini Chocolate Chips and chopped Peanuts for garnish

Instructions

  1. Prepare 12 baking cups or mini springform pans.
  2. Mix graham cracker crumbs and melted butter; press into cups to form crusts. Chill in the fridge.
  3. Melt 10 oz of semi-sweet chocolate in a microwave-safe bowl and let cool slightly.
  4. Blend softened cream cheese, powdered sugar, and vanilla until smooth. Add room temperature heavy cream and mix until thick.
  5. Fold melted chocolate into two-thirds of the cream cheese mixture and spread over the chilled crusts; refrigerate.
  6. Mix creamy peanut butter into the reserved one-third of the mixture and layer on top of the chocolate layer; chill again.
  7. For ganache, melt another 6 oz of semi-sweet chocolate with 1/4 cup heavy cream until glossy; pour over each cheesecake.
  8. Garnish with mini chocolate chips and chopped peanuts before serving.
