Ingredients
Scale
- 1 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3/4 cup Dutch-processed cocoa powder
- 1 1/2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1/4 cup vegetable oil
- 3/4 cup buttermilk (room temperature)
- 3/4 cup hot water
- 2 large eggs
- 2 tsp vanilla extract
- 3 large egg whites
- 1 cup dark brown sugar (lightly packed)
- 1 1/2 cups unsalted butter (cubed, room temperature)
- 1/4 cup Dulce de Leche (storebought or homemade)
- 2 oz dark chocolate (finely chopped)
- 2 oz heavy whipping cream
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two round baking pans.
- In a large mixing bowl, combine the dry ingredients: sift together the flour, granulated sugar, cocoa powder, baking soda, baking powder, and salt. Mix until evenly combined.
- In another bowl, whisk together the vegetable oil, buttermilk, hot water, eggs, and vanilla extract until smooth. Gradually add the wet mixture into the dry ingredients. Mix until just combined.
- In a separate bowl, beat the egg whites until stiff peaks form. Fold in the dark brown sugar gently into the batter before adding the beaten egg whites.
- Pour equal amounts of batter into each prepared pan: bake for about 30-35 minutes or until a toothpick inserted comes out clean. Allow cakes to cool in pans for 10 minutes before transferring them to wire racks to cool completely.
- While cakes are cooling, prepare ganache frosting: heat heavy whipping cream in a saucepan until simmering. Pour over chopped dark chocolate in a bowl; let sit for a few minutes before stirring until smooth.
- Once cooled, place one layer on a serving plate and spread dulce de leche over it. Top with the second layer and frost with ganache as desired.
