  • 2 cups all-purpose flour
  • ¼ + ⅛ teaspoon salt
  • 1 cup unsalted butter
  • 1½ cups powdered sugar (divided)
  • 1½ teaspoons vanilla extract
  • 1 cup mini chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grind the sliced almonds in a food processor until finely chopped.
  3. In a medium bowl, whisk together flour and salt; set aside.
  4. In a stand mixer, cream together the softened butter and ½ cup powdered sugar until slightly creamy.
  5. Mix in the vanilla extract.
  6. Gradually add the flour mixture and mix until just combined; fold in the chocolate chips and ground almonds.
  7. Scoop tablespoon-sized dough balls onto an ungreased cookie sheet, spacing them evenly.
  8. Bake for 10–12 minutes until lightly golden on the bottoms.
  9. Roll warm cookies in powdered sugar and cool completely on a wire rack; roll again in powdered sugar before serving.
