  • 23 cups cooked chicken (diced)
  • 1/4 cup bacon bits
  • 1 cup shredded cheddar cheese
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1/2 cup milk
  • 12 ounces frozen mixed vegetables (thawed)
  • 1/8 teaspoon dried thyme
  • 1214 crushed Ritz crackers
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large mixing bowl, combine thawed hash browns, diced chicken, bacon bits, shredded cheddar cheese, thawed mixed vegetables, cream of chicken soup, milk, and thyme. Mix until well combined.
  3. Lightly grease a 7×11-inch baking dish and spread the mixture evenly.
  4. In a separate bowl, mix crushed Ritz crackers and additional shredded cheddar cheese for the topping; sprinkle over the casserole.
  5. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until golden brown and bubbling.
  6. Let rest for 10–15 minutes before serving.
