  • 1 1/2 lb chicken breast
  • 1 1/2 tsp paprika
  • 1 1/2 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 12 oz gluten-free farfalle pasta
  • 4 tbsp butter
  • 2 tsp dry shallots
  • 2 tsp Italian seasoning
  • 1/2 cup chicken broth
  • 2 tbsp gluten-free flour
  • 3 cups heavy cream
  • 12 oz shredded Parmesan
  • 1/4 cup pasta water
  • 1/2 tsp salt
  • 1 tsp garlic powder

Instructions

  1. Boil water in a large pot and cook gluten-free farfalle pasta according to package instructions until al dente.
  2. In a small bowl, combine paprika, oregano, garlic powder, thyme, black pepper, and salt.
  3. Pound the chicken breast slightly to thin it out and season both sides with the spice mix.
  4. Heat olive oil in a skillet over medium heat and sear the chicken for about five minutes on each side until browned.
  5. Reduce heat to medium-low, cover, and cook for an additional 10–12 minutes until the internal temperature reaches 165°F (75°C). Remove from skillet.
  6. In the same skillet, melt butter, add dry shallots, garlic powder, and Italian seasoning; stir well for one minute.
  7. Whisk in gluten-free flour; gradually pour in chicken broth and heavy cream while stirring until smooth.
  8. Stir in shredded Parmesan cheese until melted; adjust consistency with reserved pasta water as needed.
  9. Toss cooked pasta into sauce and slice seared chicken on top before serving.
