  • 2 tablespoons olive oil
  • 2 tablespoons fajita seasoning
  • 3 boneless, skinless chicken breasts (cut into strips)
  • 1 medium red bell pepper (sliced)
  • 1 medium green bell pepper (sliced)
  • 2 large onions (sliced)
  • 2 tablespoons butter
  • 1 cup Tex-Mex cheese (or cheddar)
  • 8 tortillas

Instructions

  1. Season chicken strips with fajita seasoning.
  2. Heat olive oil in a skillet over medium heat. Cook chicken for 5-10 minutes until fully cooked; set aside.
  3. In the same skillet, sauté onions until translucent. Add bell peppers and remaining seasoning; cook until slightly tender.
  4. Return chicken to skillet; mix well and heat through.
  5. In a separate skillet, melt butter and place a tortilla inside. Fill half with chicken mixture and cheese, then fold or top with another tortilla.
  6. Cook each quesadilla for 1-2 minutes on both sides until golden brown and cheese is melted.
  7. Cut into quarters and serve hot.
