  • 4 boneless chicken breasts
  • 8 slices of ham
  • 8 slices of Swiss cheese
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup (125g) all-purpose flour
  • 2 large eggs
  • 2 cups (220g) Panko breadcrumbs
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups (473ml) whole milk
  • 1/8 teaspoon garlic powder
  • 1/2 teaspoon mustard paste
  • 1/4 teaspoon freshly grated nutmeg
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup (55g) grated Swiss cheese
  • 1/2 cup (60g) grated sharp cheddar cheese
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat the oven to 350°F (177°C).
  2. Flatten each chicken breast between plastic wrap using a meat mallet. Season with salt and pepper.
  3. Layer ham and Swiss cheese on each piece, roll tightly, and chill for 1-2 hours.
  4. Coat the rolls in flour, then dip in beaten eggs, followed by Panko breadcrumbs.
  5. Bake for 20-25 minutes until golden brown and cooked through (internal temperature reaches 165°F).
  6. In the meantime, prepare the cheese sauce by making a roux with olive oil and butter, gradually adding milk and cheeses until smooth.
  7. Slice chicken into pinwheels, drizzle with sauce, and garnish with parsley.
