  • 2 tablespoons olive oil
  • 1 yellow onion
  • 1 red bell pepper
  • 1 green bell pepper
  • pounds boneless, skinless chicken breasts
  • 1½ teaspoons Italian seasoning
  • ½ teaspoon smoked paprika
  • Kosher salt and freshly ground black pepper
  • 1 cup shredded provolone cheese

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add sliced onion and bell peppers; season with salt and pepper. Sauté for 6–8 minutes until soft. Transfer to a plate.
  2. In the same skillet, add remaining olive oil and chicken slices with Italian seasoning and smoked paprika. Cook undisturbed for 2–3 minutes to brown, then sauté until fully cooked (5–7 minutes).
  3. Return vegetables to the skillet; stir to combine.
  4. Sprinkle shredded provolone cheese on top and cover until melted (about 2 minutes).
