- 1 red bell pepper
- 1 green bell pepper
- 1¼ pounds boneless, skinless chicken breasts
- 1½ teaspoons Italian seasoning
- ½ teaspoon smoked paprika
- Kosher salt and freshly ground black pepper
- 1 cup shredded provolone cheese
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add sliced onion and bell peppers; season with salt and pepper. Sauté for 6–8 minutes until soft. Transfer to a plate.
- In the same skillet, add remaining olive oil and chicken slices with Italian seasoning and smoked paprika. Cook undisturbed for 2–3 minutes to brown, then sauté until fully cooked (5–7 minutes).
- Return vegetables to the skillet; stir to combine.
