  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2¼ cups beef broth
  • 1 (10 oz) can Rotel
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry)
  • 2 cups shredded cheese

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and onion, cooking until beef is browned and onions are translucent (8-10 minutes). Drain excess grease.
  2. Stir in garlic and taco seasoning; cook for an additional 30 seconds.
  3. Add beef broth, Rotel, and tomato paste to the skillet; stir until combined and bring to a boil.
  4. Once boiling, add rice; return to a boil then cover and reduce heat. Simmer on low for 15 minutes.
  5. Sprinkle cheese over the top and cook for another 5 minutes until melted.
  6. Serve warm with preferred taco toppings such as sour cream or guacamole.
