- 1 pound ground beef
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 2¼ cups beef broth
- 1 (10 oz) can Rotel
- 2 tablespoons tomato paste
- 1½ cups long-grain white rice (dry)
- 2 cups shredded cheese
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and onion, cooking until beef is browned and onions are translucent (8-10 minutes). Drain excess grease.
- Stir in garlic and taco seasoning; cook for an additional 30 seconds.
- Add beef broth, Rotel, and tomato paste to the skillet; stir until combined and bring to a boil.
- Once boiling, add rice; return to a boil then cover and reduce heat. Simmer on low for 15 minutes.
- Sprinkle cheese over the top and cook for another 5 minutes until melted.
