  • 1 pound chicken breast, cut into bite-sized pieces

  • 10 ounces penne pasta
  • 2½ cups low sodium chicken broth
  • 1 cup milk
  • 8 ounces fresh spinach
  • 3 ounces cream cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium heat. Sauté the chopped onion until translucent (about 3–4 minutes).
  2. Add chicken pieces; season with salt and pepper. Cook until browned and cooked through (about 5–6 minutes). Stir in minced garlic and sauté for another minute.
  3. Add uncooked penne, chicken broth, and milk. Bring to a boil, then reduce heat to low, cover, and simmer for 15–20 minutes until pasta is tender.
