  • 1 head cauliflower (about 5 cups), chopped into florets
  • 2 slices bacon, chopped
  • 1 tablespoon olive oil
  • ¼ cup yellow onion, diced
  • 3 garlic cloves, minced
  • 1 cup almond milk (or milk of choice)
  • 2 tablespoons all-purpose flour (or tapioca flour for gluten-free)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded parmesan cheese
  • ½ teaspoon salt
  • 2 tablespoons chives, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cook bacon in a large deep skillet until crispy; set aside, keeping the grease.
  3. Boil cauliflower florets in a saucepan for about 5 minutes; drain and set aside.
  4. In the same skillet with bacon grease, sauté onions and garlic until soft (3–5 minutes).
  5. Whisk almond milk and flour together until smooth; add to skillet and bring to a low boil.
  6. Stir in cheeses and salt until melted into a creamy sauce.
  7. Mix in drained cauliflower ensuring even coating.
  8. Transfer mixture to an 8×8-inch baking dish; sprinkle cooked bacon on top.
  9. Bake for about 20 minutes until bubbly and golden.
  10. Remove from oven, garnish with chives, and serve hot.
