- 8 oz cream cheese (cold)
- 8 Tbsp butter (room temperature)
- 1 cup powdered sugar
Instructions
- Preheat your oven to 375°F and line a jelly roll pan with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, salt, and spices; set aside.
- In a large bowl, whisk eggs until combined, then mix in sugar, oil, and vanilla.
- Gradually combine dry ingredients with wet mixture; fold in shredded carrots.
- Spread batter evenly in the prepared pan and bake for 10–13 minutes until springy.
- Roll the hot cake using parchment paper; let cool for about 10 minutes.
- For frosting, beat cream cheese until smooth; gradually add butter, then powdered sugar and vanilla.
- Unroll the cooled cake gently, spread frosting over it (leave one end unfrosted), and re-roll tightly.
