- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon

- 1 cup shredded carrots
- 4 ounces cream cheese (room temperature)
- 1/4 cup granulated sugar
- 1 large egg yolk
- 3/4 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F. Spray an 8×8 baking pan with non-stick spray or line it with parchment paper.
- In a mixing bowl, combine melted butter and brown sugar until smooth. Mix in the egg and vanilla.
- In another bowl, whisk together flour, cinnamon, baking powder, and salt; fold into wet ingredients until just combined.
- Stir in shredded carrots until evenly distributed.
- Pour batter into prepared pan and bake for about 20 minutes or until a toothpick comes out clean.
- While baking, mix cream cheese, granulated sugar, egg yolk, and vanilla until smooth.
- Pour cream cheese mixture over warm cake base and return to oven for an additional 20 minutes.
- Allow cooling before cutting into squares.
