  • 1 cup light brown sugar (packed)
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup shredded carrots
  • 4 ounces cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 3/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F. Spray an 8×8 baking pan with non-stick spray or line it with parchment paper.
  2. In a mixing bowl, combine melted butter and brown sugar until smooth. Mix in the egg and vanilla.
  3. In another bowl, whisk together flour, cinnamon, baking powder, and salt; fold into wet ingredients until just combined.
  4. Stir in shredded carrots until evenly distributed.
  5. Pour batter into prepared pan and bake for about 20 minutes or until a toothpick comes out clean.
  6. While baking, mix cream cheese, granulated sugar, egg yolk, and vanilla until smooth.
  7. Pour cream cheese mixture over warm cake base and return to oven for an additional 20 minutes.
  8. Allow cooling before cutting into squares.
