  • 4 large eggs
  • 2 cups all-purpose flour

  • 1 cup pecan chips
  • 1 container (about 16 oz) cream cheese frosting
  • 1 (16 oz) bag Ghirardelli white chocolate melting wafers
  • 1/2 cup pecans, chopped

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9×13-inch baking dish with nonstick spray.
  2. In a stand mixer, combine sugar, canola oil, and eggs until well blended.
  3. Gradually add flour, baking soda, baking powder, salt, and cinnamon; mix until just combined.
  4. Fold in shredded carrots and pecan chips evenly into the batter.
  5. Pour batter into the prepared dish and bake for 30-40 minutes until a toothpick comes out clean.
  6. Allow the cake to cool completely on a wire rack before crumbling it into fine crumbs in a bowl.
  7. Mix in cream cheese frosting until you achieve a moldable consistency.
  8. Roll mixture into balls and place them on a cookie sheet; refrigerate for at least an hour.
  9. Melt white chocolate using a double boiler; dip each truffle into chocolate and return to the cookie sheet topped with chopped pecans.
