  • 1 pound ground beef
  • 1 pound ground pork
  • 1 cup ricotta cheese
  • 1 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1 large egg
  • 1 cup pork rind crumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 tablespoons unsalted butter
  • 1 1/2 teaspoons minced garlic
  • Optional: 1/4 teaspoon paprika
  • Optional: Fresh basil, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a baking dish.
  2. In a mixing bowl, combine ground beef, ground pork, egg, ricotta cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until just combined.
  3. Shape into small meatballs and roll in pork rind crumbs.
  4. Place meatballs in the baking dish and bake for 20 minutes until browned.
  5. In a skillet, melt butter over medium heat and sauté minced garlic.
  6. Add heavy cream, seasonings, and simmer until thickened. Stir in Parmesan cheese.
  7. Combine baked meatballs with the sauce and serve.
