- 1 pound ground pork
- 1 cup ricotta cheese
- 1 cup heavy cream
- 1/3 cup grated Parmesan cheese
- 1 large egg
- 1 cup pork rind crumbs
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 2 tablespoons unsalted butter
- 1 1/2 teaspoons minced garlic
- Optional: 1/4 teaspoon paprika
- Optional: Fresh basil, for garnish
Instructions
- Preheat the oven to 400°F (200°C) and grease a baking dish.
- In a mixing bowl, combine ground beef, ground pork, egg, ricotta cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until just combined.
- Shape into small meatballs and roll in pork rind crumbs.
- Place meatballs in the baking dish and bake for 20 minutes until browned.
