Ingredients

Scale
  • 1/2 cup unsalted butter
  • 3/4 cup whole milk or buttermilk
  • 2 and 1/4 teaspoons instant yeast
  • 3 tablespoons honey
  • 1 large egg
  • 1 teaspoon salt
  • 2 teaspoons fresh chopped sage
  • 1 teaspoon fresh thyme
  • 3 cups bread flour

Instructions

  1. Brown the butter in a light-colored skillet over medium heat until it turns light caramel brown. Transfer to a bowl and let cool.
  2. In a mixing bowl, whisk together warm milk, yeast, and 1 tablespoon honey. Let sit until foamy.
  3. Combine remaining honey, egg, cooled brown butter, salt, herbs, and flour into the yeast mixture. Mix until a soft dough forms.
  4. Knead the dough for about 5 minutes until elastic. Place in a greased bowl to rise until doubled in size (about 1.5–2 hours).
  5. Shape into rolls and place in greased baking pans. Allow to rise again before baking at 350°F for about 20-25 minutes until golden brown.
