  • 2 pounds beef chuck
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 tablespoons neutral oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons garam masala
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • ½ teaspoon ground mustard
  • ½ teaspoon cayenne pepper (optional)
  • ½ teaspoon ground ginger
  • ½ teaspoon cinnamon
  • 2 tablespoons tomato paste
  • ¼ cup apple cider vinegar
  • 1 cup low-sodium beef stock

Instructions

  1. Cut the beef chuck into 2-inch cubes and season with salt and black pepper.
  2. Heat oil in a large skillet over medium-high heat. Brown the beef on all sides; then set aside.
