- 2.5 kg / 5 lb standing rib roast (bone-in)
- 1 onion, quartered
- 1 head of garlic, halved
- 5 sprigs thyme
- 3 sprigs rosemary
- 150g unsalted butter, softened
- 5 garlic cloves, minced
- 2 tsp finely chopped fresh rosemary
- 2 tsp finely chopped fresh thyme
- 2 tsp salt
- 1 tsp black pepper
- 1 1/2 cups beef broth/stock, low salt
- 2 1/2 cups dry red wine
- 1 tbsp cornflour/cornstarch (optional)
Instructions
- Preheat the oven to 120°C (250°F).
- Place the rib roast in a roasting pan; rub with softened butter and season generously with salt and pepper.
- Arrange quartered onion, halved garlic, thyme, and rosemary around the roast.
- Roast for about 120 minutes or until reaching an internal temperature of 55°C (130°F) for medium rare.
- Allow resting for at least 20 minutes before carving to enhance juiciness.
