  • 2.5 kg / 5 lb standing rib roast (bone-in)
  • 1 onion, quartered
  • 1 head of garlic, halved
  • 5 sprigs thyme
  • 3 sprigs rosemary
  • 150g unsalted butter, softened
  • 5 garlic cloves, minced
  • 2 tsp finely chopped fresh rosemary
  • 2 tsp finely chopped fresh thyme
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 1/2 cups beef broth/stock, low salt
  • 2 1/2 cups dry red wine
  • 1 tbsp cornflour/cornstarch (optional)

Instructions

  1. Preheat the oven to 120°C (250°F).
  2. Place the rib roast in a roasting pan; rub with softened butter and season generously with salt and pepper.
  3. Arrange quartered onion, halved garlic, thyme, and rosemary around the roast.
  4. Roast for about 120 minutes or until reaching an internal temperature of 55°C (130°F) for medium rare.
  5. Allow resting for at least 20 minutes before carving to enhance juiciness.
