- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (10 oz) enchilada sauce
- 1 can (14.5 oz) diced tomatoes, drained
- 1 can (15 oz) black beans, drained and rinsed
- 8 corn tortillas
- 2 cups shredded cheddar cheese
- 2 cups shredded Monterey Jack cheese
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a skillet over medium heat, cook the ground beef with diced onion and garlic until browned; drain excess fat.
- Stir in enchilada sauce, diced tomatoes, black beans, cumin, chili powder, salt, and pepper; simmer for 5 minutes.
- In the baking dish, layer 4 corn tortillas at the bottom. Spread half the beef mixture and top with half the cheese. Repeat layers.
- Bake for about 25 minutes until bubbly and lightly browned.
