  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook the ground beef with diced onion and garlic until browned; drain excess fat.
  3. Stir in enchilada sauce, diced tomatoes, black beans, cumin, chili powder, salt, and pepper; simmer for 5 minutes.
  4. In the baking dish, layer 4 corn tortillas at the bottom. Spread half the beef mixture and top with half the cheese. Repeat layers.
  5. Bake for about 25 minutes until bubbly and lightly browned.
  6. Let rest for a few minutes before serving.
