- 2 lbs chuck roast
- 1 cup pearl barley
- 3 tablespoons olive oil
- 1½ cups chopped carrots
- 1 cup chopped celery
- 2 cups chopped yellow onion
- 3 tablespoons tomato paste
- 2 cartons (32 oz) low-sodium broth (chicken or beef)
- Fresh herbs: rosemary and thyme
Instructions
- Sear the beef in batches in olive oil until golden brown, then set aside.
- Sauté carrots, celery, and onion in the same pot until softened.
- Stir in tomato paste and garlic; cook until fragrant.
- Add broth, soy sauce, Worcestershire sauce, herbs, and return beef to the pot.
- Simmer covered for about 45–60 minutes until beef is tender.
- Stir in pearl barley; simmer for another 45–60 minutes until barley is cooked.
- Finish with fresh parsley before serving.
