- ¼ cup white wine or low-sodium chicken broth
- 2 tablespoons honey
- 1 tablespoon Dijon mustard

- 4 (6 oz) salmon fillets

- 2 teaspoons olive oil
Instructions
- Let the salmon rest at room temperature for 10–15 minutes before cooking.
- In a medium saucepan, combine balsamic vinegar, white wine (or broth), honey, Dijon mustard, garlic, and rosemary sprig; bring to a boil over medium-high heat.
- Reduce heat to medium-low and simmer until thickened (about 10–15 minutes). Strain into a bowl and set aside.
- Season salmon fillets with salt and pepper. Heat olive oil in a non-stick skillet over medium-high heat.
- Sear salmon for 3–4 minutes on one side until browned; flip and cook for another 2–3 minutes until cooked through.
