Description

  • 2 1/2 pounds side of salmon
  • Salt and pepper (to taste)
  • 1 can pineapple slices (drained, reserve 1/4 cup juice)
  • 1/2 cup sweet chili sauce
  • 1/4 cup unsalted butter (melted)
  • 4 tablespoons hoisin sauce
  • 2 tablespoons fresh lemon juice
  • 3 garlic cloves (minced)
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with nonstick aluminum foil.
  2. Place salmon on the prepared sheet; season with salt and pepper.
  3. Arrange pineapple slices underneath the salmon.
  4. In a bowl, whisk together sweet chili sauce, melted butter, hoisin sauce, minced garlic, lemon juice, and reserved pineapple juice. Pour over salmon.
  5. Bake for about 15 minutes or until salmon is flaky. Broil for an extra 5 minutes for added char.
  6. Garnish with fresh cilantro and serve with lime slices.
