  • 2 large baking potatoes
  • 200g block of feta cheese
  • 1 head of garlic
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chilli flakes
  • 1 lemon, quartered
  • 1 tbsp honey
  • 1/4 cup fresh basil

Instructions

  1. Preheat the oven to 200C (390F).
  2. Wash and cube the baking potatoes. Par-boil in water for 6-8 minutes; drain and let steam dry.
  3. In a baking dish, combine par-boiled potatoes with olive oil, thyme, oregano, salt, and pepper.
  4. Roast for 30-40 minutes until golden brown.
  5. Add the feta cheese block and squeezed lemon over the potatoes.
  6. Roast for an additional 15 minutes.
  7. Mash roasted garlic cloves and mix with potatoes before serving.
  8. Drizzle honey over the dish and garnish with fresh basil.
