Ingredients

Scale
  • 8 slices bacon (½-inch pieces)
  • ⅓ cup finely chopped sweet onion
  • 1 cup all-purpose flour
  • 2 tablespoons chopped fresh chives
  • 1 teaspoon baking powder
  • ½ teaspoon salt

  • 1 large egg (beaten)
  • 1 tablespoon canola or vegetable oil
  • 1 cup corn (frozen, canned, or fresh)

Instructions

  1. In a medium skillet, cook the bacon over medium heat until crisp. Add the onion and cook until softened. Reserve some for topping.
