  • 1 cup brown sugar
  • 3 large eggs
  • 1 cup vegetable oil (or half applesauce)
  • 3 teaspoons vanilla extract
  • 3 cups all-purpose flour

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 cups grated zucchini
  • 1 cup diced apple
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 325°F (163°C) and grease two 8 x 4-inch loaf pans.
  2. Grate zucchini and dice apple; set aside.
  3. In a large bowl, mix flour, cinnamon, baking powder, baking soda, and salt.
  4. In another bowl, whisk together eggs, sugars, oil/applesauce, and vanilla.
  5. Combine wet and dry ingredients until just mixed; avoid overmixing.
  6. Fold in zucchini, apple, and walnuts gently.
  7. Pour batter into prepared pans and bake: mini loaves for about 35-40 minutes; full loaves for about 55 minutes or until a toothpick comes out clean.
  8. Cool for 20 minutes in the pan before transferring to a wire rack.
