- 1/2 cup unsweetened applesauce
- 1 1/2 cups finely diced Honeycrisp or Gala apples
- For glaze: 2 cups powdered sugar, 1/3 cup + 2 tbsp apple cider or juice
Instructions
- Preheat the oven to 400°F and grease a nonstick baking sheet.
- In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
- In a large bowl, mix melted butter and sugar until combined. Add egg, vanilla extract, and applesauce; whisk until smooth.
- Gently fold dry ingredients into wet mixture until just combined; then fold in diced apples.
- Drop tablespoon-sized portions onto the prepared baking sheet.
- Bake for about 10 minutes until golden brown. Broil on high for an additional 2-4 minutes until caramelized.
- Prepare the glaze by mixing powdered sugar and apple cider until smooth.
- Brush warm fritter bites with glaze and let sit for about 15 minutes before serving.
