  • 1/2 cup all-purpose flour (63 grams)
  • 1/2 cup brown sugar (100 grams)
  • 1 teaspoon cinnamon
  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (56 grams) (melted)
  • 24 ounces full-fat cream cheese (680 grams) (room temperature)
  • 3/4 cup granulated sugar (150 grams)
  • 1/4 cup brown sugar (50 grams)
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch (or 2 tablespoons all-purpose flour)
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (120 ml) (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Prepare a 9-inch springform pan by wrapping it in tin foil and greasing the inside.
  3. Combine graham cracker crumbs, brown sugar, cinnamon, and melted butter for the crust. Press into the bottom of the prepared pan.
  4. For the apple filling, peel and slice apples, then toss with brown sugar and cinnamon.
  5. In a mixing bowl, beat cream cheese until smooth, then add sugars, cinnamon, cornstarch, vanilla extract, sour cream, and eggs one at a time.
  6. Pour half of the cheesecake batter over the crust, add apple filling on top, then cover with remaining batter.
  7. Bake in a water bath for about 60 minutes or until set with a slight jiggle in the center.
  8. Cool gradually in the oven before refrigerating for at least four hours or overnight.
