- 1/2 cup sour cream (120 ml) (room temperature)
- 3 large eggs (room temperature)

Instructions
- Preheat your oven to 350°F (180°C).
- Prepare a 9-inch springform pan by wrapping it in tin foil and greasing the inside.
- Combine graham cracker crumbs, brown sugar, cinnamon, and melted butter for the crust. Press into the bottom of the prepared pan.
- For the apple filling, peel and slice apples, then toss with brown sugar and cinnamon.
- In a mixing bowl, beat cream cheese until smooth, then add sugars, cinnamon, cornstarch, vanilla extract, sour cream, and eggs one at a time.
- Pour half of the cheesecake batter over the crust, add apple filling on top, then cover with remaining batter.
- Bake in a water bath for about 60 minutes or until set with a slight jiggle in the center.
- Cool gradually in the oven before refrigerating for at least four hours or overnight.
